Indulge in the rustic charm of the Hill Country Salsa, an authentic Texas-inspired delight that's bursting with freshness and flavor. Crafted with the goodness of garden-picked ingredients, this salsa is a testament to the time-honored tradition of gathering around good food. For an even fresher take, swap out canned corn for fresh kernels straight from the cob.
FEATURED SEEDLINGS
INGREDIENTS
1 (15-ounce) can
black beans
2 ears
fresh corn
4
large tomatoes
1
ripe avocado
1
large green bell pepper
1 bunch
green onions
2
garlic cloves, finely chopped
1
large jalapeno pepper
1/3 c
fresh cilantro
1/4 c
fresh squeezed lime juice
2 Tbsp
olive oil
1 tsp
salt
2 tsp
ground cumin
INSTRUCTIONS
If using fresh corn, blanch the kernels in boiling water for 2 minutes, then cool them in ice water and drain.
In a large bowl, combine the black beans, fresh corn kernels, tomatoes, avocado, green bell pepper, green onions, garlic, and jalapeño pepper.
In a separate bowl, prepare the dressing by combining the chopped cilantro, lime juice, olive oil, salt, and ground cumin. Whisk until well blended.
Pour the dressing over the salsa ingredients and toss gently to mix.
Cover and chill in the refrigerator for at least 1 hour to allow the flavors to meld. If you can make ahead and wait overnight, even better!
Serve the salsa chilled with your choice of chips or as a garnish for grilled dishes.
